Biscuit lovers around the Southeast know that Callie's has some of the best biscuits you'll ever put in your mouth! With multiple eateries and a sizable mail order business these small and fluffy pillows of heaven are enjoyed all over the country.
Did you know that this same delicious biscuit recipe can be used to make the most delectable crackers?? Put a sweet or savory twist on them, and you will be hosting a party like a queen.
When Carrie Morey, the founder of Callie's, offered to give me a private lesson on biscuit making she also taught me how to use her famous dough to make the most delectable biscuit crackers. Carrie only uses White Lily flour for all of her baking needs, and I quickly jumped on board. White Lily flours are milled from 100% Soft Winter Wheat, which makes for the fluffiest and softest biscuits.
Savory Biscuit Crackers You will start with Callie's famous biscuit recipe. Once you make your biscuit dough-- instead of cutting your standard fluffy biscuits you are going to roll out the dough to create a very thin pancake (see images below). Cut them into irregular rectangular shapes with a pizza cutter
Once you place them on parchment lined baking sheets (below), brush them with melted butter. This is where the fun part comes in as you can make them sweet or savory depending on your taste. I sprinkled mine with salt and freshly ground pepper as I wanted to serve mine with pimento cheese. Cinnamon and sugar would also be so so good on top of these for a sweet option.
I served mine with pimento cheese, and they would also be delicious as your cracker option on your next cheese board.
These also make wonderful hostess gifts-- bag up a handful and take with a container of pimento cheese or honey to your next dinner party. Your host will really appreciate this special gift.
